Flashy Trout Back Lettuce (Lactuca sativa) is a tender heirloom romaine with a speckled red and green coloration that gives the plant a distinctive trout-like appearance. This variety thrives in cool weather and can be planted indoors or outdoors.

The speckled red and green leaves really do look like a trout’s back, which makes the garden bed feel a bit more alive than plain lettuce. They stayed tender even through a few cooler nights, and I’ve been snipping leaves for salads for weeks now.
Planted these in early spring and the speckled red-and-green leaves really do look like trout swimming in the bed. Germination was quick, though I lost a few seedlings to a surprise cold snap since they prefer cool weather. Still, the tender romaine hearts we harvested were worth the extra care.
